Spicy Carmelized Pecans

 Spicy Carmelized Pecans

2 cups pecan halves
water to cover
2 tablespoons butter
3 tablespoons sugsr
1/4 teaspoon salt
1/4 teaspoon cayenne

Place pecans in a large skillet or saucepan with water to cover. Bring the ingredients just to a simmer over high heat. Drain imediately and set aside.

Melt butter in large skillet (non-stick is best). Remove from heat and stir in sugar, salt and cayenne. Then add the nuts.

Return the pan to medium high heat and cook the nuts, stiring constantly with a spatula, until they turn a caramel color. Remove from pan to a platter to cool in a single layer. Store the nuts in layers separated by wax paper.


These take only 5 or 10 minutes and can be used as a salad ingredient, fruit salad or ice cream garnish, or just eat 'em!
