(serves 4)
Crepes:
2/3 cupflour
1 cup milk
1 tablespoon vegetable oil
1 teaspoon sugar
1/4 teaspoon baking powder
1/4 teaspoon salt
1 egg
Filling:
1/4 cup fresh mushrooms -chopped
2 tablespoons scallion
2 tablespoons margarine
2/3 cup small shrimp-cooked
6 oz crab meat -- (imitation is fine!)
1/2 cup half and half
6 oz cream cheese- cubed
Topping:
4 oz swiss cheese-shredded
2 tablespoons scallion-chopped
Mix ingredients for crepes. Pour about 1/4 cup of batter
in small frying pan to make crepes. Stove should be on medium heat. Spray pan in between crepes. Set crepes aside
(it's okay to stack them).
In a large frying pan, melt margarine over high heat. Reduce to medium heat and add mushrooms and scallions and
cook until tender. Add crab, shrimp, half and half, and cream cheese and stir constantly. When cream chesse is
thouroughly melted, remove from heat.
Fill each crepe with about 1/4 cup of filling and fold. Line up crepes in baking dish. Sprinkle shredded cheese
on crepes. Microwave for 4-6 minutes. Sprinkle with scallions and serve.
