Aunt Mable's Carrot Cake from NicoleW

Oven: 350C
Large cake pan
Time in oven: 35-40 min.

Ingredients for Cake:
2 cups sugar
2 cups flour
3 cups shredded carrots
1 1/4 cup veg. oil
4 eggs
2 tsp. cinnamon
2 tsp vanilla
2 tsp baking soda
pinch of salt
1/4 tsp. cream of tartar

Mix dry ingredients together; Blend in oil - add eggs, carrots, vanilla. BLEND WELL. Pour into greased pan.

8oz. plain creme cheese
1/4 cup butter
1 lb icing sugar
1 tsp vanilla
1 tsp orange juice

Mix the above ingredients thouroughly. This icing can last for months (refrigerate). Nuts can be added. Cake freezes well.

This cake is moist and delicious....the icing is great. An overall super cake but high in calories.
